New Recipe... Grilled S-PB & J

    This recipe is a new spin on the old
    Peanut Butter & Jelly (PB&J), a classic "comfort food" for many people.

    I call my variation of the original recipe a Grilled Super-PB&J (the S could also stand for Strawberries, but I like "Super" better.) My variations are in red text in the recipe below.


    Ingredients:

    • 1/4 cup smooth, peanut butter
    • 2 tablespoons raspberry jam,100% pure fruit
    • 1/2 teaspoon maple syrup, 100% pure
    • 1/2 teaspoon vanilla extract
    • 1 cup raspberries, fresh or 3-4 large strawberries (sliced)

    Method:

    • Mix together peanut butter, syrup, vanilla and raspberry jam until well blended.
    • Spread nut butter mixture on both top and bottom pieces of bread.
    • Grill each half of the sandwich (mixture side up) until underside is lightly grilled.
    • Press fresh sliced Strawberries (or raspberries) into spread.
    • Flip half without strawberries over onto the strawberry one and press sandwich gently together (this will keep berries from falling out).
    • Makes about 1.5 sandwiches (maybe two if you spread it on thinner)

    More Ideas..
    This recipe could also be done with bananas (a favorite of my ex-wife). I'm not saying she was bananas... maybe she was just a carrier since she drove me bananas at times!

    Taste & Texture
    I’m not sure if it is the grilling of the sandwiches or the mixing of the peanut butter
    with the jelly before putting it on the sandwich, but I found that the texture of the sandwich was not as “sticky” as it usually is with PB&J. Perhaps the mixing along with the heat of the grilling softened up the peanut butter … in either case, it tasted pretty good. The fresh fruit really perked up the sandwich and set it apart from a [boring?] PB&J. I did not taste the vanilla and maple syrup. I’m sure it added to the sweetness of the sandwich and the liquids helped make the mixing process easier.
